Taking off the front wheel is a simple thing to do, in a way, until ya git to the calipers and pads; Is there a better way to remove the wheel without removing the calipers? Whats the easiest way? Calipers and pads seem to be a bit of a struggle, it is a tight fit between the rotors; pads, calipers and wheel,  or is it just me?. 07 s2r 1K but there all very similar.

It is a tight fit.  Removing the calipers is also a tight fit.  You need to back the brake pistons in all the way.  You could also cover any part you thiknk you might scratch with masking tape

dang! was hoping there was a trick the experts use; I've tried loosening and left the calipers on the forks; but its no easier that taking the calipers off; cant remember now how I did it. I do recall struggling with this; where it would seem to be easy-peasy.

Remove the calipers bolts.

Grab caliper with both hands and twist like you're trying to fold the rotor into a taco.
No tools, just bare handed.

That will retract the pistons and pads some.

Check to see if it's enough to sneak the caliper out.

This is when you can avoid scratching the wheel.

If it's not enough, twist it some more.

Rinse and repeat as necessary.

One bungee cord or the like for each side to restrain the caliper to the bike and keep it out of the way.

Remove the wheel.
